Jaman(Jodan) kab dalte hai dudh me, ubalte dudh me ya gungune me ?

            Dahi ka jaman hamesha gungune dudh me dalna chahiye.

Dahi thik se kyon nahi jam pati hai ?

  • Dahi jamane ke liye use aisi jagah rakha jata hai, jaha wo hil-dol na sake. Agar bartan hil gaya to samajh le wo sahi se nahi jamega.
  • Dahi ko jamane ke liye garmahat ki jarurat hoti hai. Agar use sahi tarah se dhak kar garm jagah nahi rakh paye, tab bhi nahi jam payega.
  • Agar bahut jyada garm dudh me jaman dalenge to usme bahut paani ho jayega.

Sardi ke mukable garmi me dahi jaldi kyon jamta hai ?

            Bahut reason hai, Dudh ko dahi me badalane wale “lactobaciles bacteria” ko garmahat ki jarurat padati hai.

            Garmi ke mousham me temperature jyada hone se bacteria ko multiply karane me help ho jati hai. Isliye garmi me dahi jaldi jamta hai.

            Sardi me temperature garm nahi hone ke wajah se bacteria apane aap ko multiply nahi kar pati hai. Isliye kuchh log sardi ke dino me dahi jamane ke liye, dudh me jaman dalane ke baad use garm kapda se dhank dete hai.

Garmi me dahi khatta kyo ho jata hai ?

            Dahi khatta hone ke yah kuchh karan hai-

  • Garm dudh me jaman dalkar garm jagah par rakhana.
  • Khatta jaman se dahi jamana.
  • Dahi jamane ke baad bahut der tak garmi me bahar chhod dena.

Garmi me dahi jamane ka sahi tarika—

            Dahi hamesha steel, mitti ya chini mitti ke bartan me hi jamana chahiye.

  • Dudh ko achchhi tarah se ubal(boil) len.
  • Bartan me nikalane ke turant baad phent(mix) len, isse malai achchhi jamegi.
  • Aadha chammach dahi ka jaman dale, aur ise achchhi tarah se mix Karen.
  • Mitti ke bartan me jama rahe hai, to jaman bartan ke Charon taraf lagayen, phir dudh dalen.
  • Dudh dalane ke baad bartan ko ek plate se dhakkar aisi jagah par rakhen taki wo hile na.
  • 5 se 6 ghante ke baad dahi jamkar taiyar ho jayegi.

Garmi me rat me dahi jamana sahi hai ya din me ?

            Normally garmi ke dino me dahi jamane ke usme paani aa hi jata hai. Isse wo gadha ya tight nahi ho pata hai. Ise sham ko 4-5 baje jamayenge to yah 6 ghante me jam jayega.

            Dahi jab jam jaye to use aap turant istemal na kare. Use freeze me rakh den. Isse subah aapko ekdum gadha yani tight mitha dahi khane ko milega.

Kya bina jaman ke bhi dahi jam jayega ?

            Bilkul, Isake liye sabse pahale dudh ko halka gunguna kar le, itana ki usme ungly dalane par pura ungly dub jaye. Isake baad yah 4 trick follow kare-

            Hari mirch – Dudh ko ek katori me nikal de, ab isme do hari mirch dale, mirch ka danthal hona chahiye. Mirch ko dudh me puri tarah se duba de. Isake baad dudh ko dhak kar 6 ghante ke liye kisi garm jagah par rakh de, dahi jam jayega.

            Nimbu – isake liye aapko gungune dudh me 2 chammach nimbu ras dal de. Isake baad dudh ko dhakkar 6-7 ghante ke liye garm jagah par rakh de, dahi jam jayega.

            Silver coin ya anguthi – isame bhi wahi sab process apnana hai, isme silver coin ya anguthi ko dalane ke baad 7-8 ghante ke liye gungune dudh me dubokar kisi garm jagah par rakh de, dahi jam jayega.

Garmi ke dino me dahi khane ke 5 fayade, jarur janiye-

            Digestive systems – Is mousham me pet me infection ki problem badh jati hai. Aise me dahi digestive systems ko healthy rakhta hai. Pet kharab, indigestion ki problem nahi hoti hai.

            Ulti-dast – Loo lagane se ulti-dast hona normal baat hai. Dahi is samay fayada karega. Dahi me “probiotics” hote hai, jo pet me good & bad bacteria ke balance ko thik karate hai.

            Immunity – Jo log bar-bar bimar padate hai, unhe apani diet me dahi ko jarur shamil karana chahiye. Ise rojana khane se immune systems majboot hota hai.

            Skin care – Garmi ke dino me pasina, piples, tanning, acne jaisi kai problem hoti hai. Dahi skin ki chamak ko banaye rakhta hai. Isme moujud vitamin- E, zinc se skin complection sahi hota hai.

            Vaginal infection – Jin mahilaon ko white discharge ki problem hai. Unhe din me do bar taza sada dahi jarur khana chahiye, jisse khujali ki problem me aaram milati hai.

            Mouth infection – Dahi ke malai ko muh ke chhalon par  din me 2-3 baar lagane se aaram milta hai. Dahi & Shahad(honey) ko barabar matra me milakar subah-sham khane se bhi muh ke chhale me aaram milta hai. Agar aapke paas shahad nahi hai to sada dahi bhi chalega.

Kya dahi khane se tension kam hoga ?

            Dahi khane ka siddha connection dimag se hota hai. Ise khane se aapka mood achchha ho sakta hai.

            Isme “lacto-baciles” hote hai jo ek immune friendly bacteria hai. Ye hamari body me “micro-biom” ke character ko change karane me jaruri role ada karate hai, jisse depression dur hota hai.

            Jin logon ko bahut jyada tension rahta hai, unhe apani daily diet me dahi ko shamil karna chahiye, daily ek katori dahi kafi hai.

  • Gunguna nahi, jyada garm dudh me dahi ka jaman milayen, isse dahi khatta ho jayega.
  • Dahi ko kisi aisi jagah par rakhen, jaha thodi garmi ho, isse wo khatta ho jayega.
  • Dahi khatta karane ke liye, use 3-4 ghante ke liye dhoop me rakh sakate hai.
  • Dahi me namak milakar rakhane se bhi , wah jald hi khatta ho jayega.
