  • kali mirch paudar – ½ chammach
  • haldee – 1 chammach
  • hari dhaniya kata hua
  • sarason ka tel – 2 chammach


 Banaane ka tareeka –

• sabase pahale chana ke daal ko saaph karake achchhe se dho len.

• preshar kookar mein ise dedh gilaas paanee ke saath boeel kare ya ubaal len |

 • usake baad thanda hone ke baad miksee mein pis len .

• usake baad kadhaahee mein 2 chammach tel garm kare .

 • peesee huee daal ke saath garm masaala, jeera, kaalee mirch paudar, laal mirch paudar, hari dhaniya, adarak lahasun ka pest, haldee paudar, namak daalakar achchhe se bhune |

 • usake baad aate mein 2 chammach tel milaakar achchhee tarah se mulaayam goonth len.

• ab aate kee chhotee-chhotee loee banae, isamen bhuna hua chana daal daalen aur pudee kee tarah haath se bel len.

 • jab sab is tarah se taiyaar ho jaaye to kadhaahee mein sarason tel garm karen ya koee bhee tel daal sakate hai jo aap khaate hai.

• jab tel garm ho jaaye to usamen pudee daalakar tal len.

• usake baad yah taiyaar daal bhari pudee chaay ke saath apane pyaar ko parose.

• neeboo ras – 1 chammach

• draee phroots – sajaavat ke lie

• soyaabeen tel ya ghee – talane ke lie.

 Ghevar banaane ka tareeka –

• sabase pahale maida ko chhaanakar kisee bartan mein nikaal len .

 • ab ghee ko kisee bartan mein daalen aur barph yaanee aais kyoob ke saath haath se milaie, ghee aur barph jab kreem jaisa ban jaaye tab barph ke tukade ko nikaal den.

 • ab is chikanee ghee aur barph se banee kreem mein thoda maida daalakar milaen, gaadha hone par doodh mila den, dhyaan rahe kee guthalee na rahen.

• yah ghol patala hona chaahie, agar chammach se giraaya jaaye to paalee dhaar se geere.

 • ab ek kadhaahee mein ghee daalakar garm kare, sirph phraee karane bhar .

• maida ka ghol ko kisee chamache mein bhar kar ek paalee dhaar se girae, isake baad ghee se jhaag uthega jo upar dikhaee dega.

• ab 1-2 minat ke baad jhaag khatm hone par doosara chammach ghol patalee dhaar se girae.

 • aanch dheemee hee rakhen, isee tarah se saare ghevar tal len aur thaalee mein ek ke upar ek rakhen.

 Thepala banaane ka tareeka –

• kisee bartan mein 2 kap genhoon ka aata len aur isamen ¼ kap besan mila den .

 • ab donon ko achchhe se mila len, is miksachar mein laal mirch paudar, ajavaayan, haldee aur svaadaanusaar namak daalakar achchhe se mila len.

• isamen katee huee hari mirch, kasa hua adarak daalakar miks karen .

• methee ko pattiyon ko saaph karake achchhe se dhokar baareeq kaat len.

 • isee mein ½ kap dahee mila den isase thepala mein methee se aane vaalee kadavaahat door ho jaegee aur thepala ka svaad bhee badh jaega.

• ab aata mein 2 chammach ghee aur jarurat bhar paanee daalakar achchhe se aata ko mulaayam goonth len.

• aata goonthane ke baad isakee loiyaan bana len aur ise rotee ya paraathe kee tarah bel len.

• ab ise gais par paraathe kee tarah heen donon taraph ghee lagaakar senk len.

• ab svaadist thepala banakar taiyaar ho chooka hai, pahale sahee se baith jaiye ise chaay, dahee ya aachaar ke saath khaana hai.

• imalee palp – 1 chammach

 • haldee paudar – 1 chammach

• hing – ¼ kap

• dhaniya paudar – 1 chammach

• namak – svaadaanusaar

• tel – jarurat bhar.

 Arabee ke paton ke pakode banaane ka tareeka –

• sabase pahale chane kee daal aur udad kee daal ko ek bartan mein daalakar 4 ghante ke lie paanee mein bhingo kar rakhen.

 • 4 ghante ke baad jab donon daal paanee mein achchhe se paanee mein phul jaaye, to ise saaph paanee se achchhe se saaph karake chhaanakar len .

• ab ise miksachar mein pis len saath hee usame ek chhotee chammach jeera, 2 hari mirch, 4-5 kaliyaan lahasun, ek chammach imalee ka palp aur thoda sa paanee daalakar achchhe se pis len.

• isake baad pise hue daal mein ek chhotee chammach dhaniya paudar, chhotee chamach haldee paudar, ek chutakee hing aur svaadaanusaar namak daalakar achchhe se milaen .

• ab sabhee arabee ke patton ko niche se mote danthal ko kaat kar hata den, saath ha iuper se belan chala den, taaki usake danthal chapate ho jaaye aur pakode banaate samay phate na .

 • ab pahale ek patte ko jameen par ya baraabar jagah par rakhen aur chaaron taraph pise hue daal lagaayen, usake baad usape dusare patte usee ke upar baraabar mein rakhen aur pisihuee daal lagaayen, aise hee teesaree aur chauthee patte bhee laga sakate hain.

• 10-15 minat ke baad yah pak kar taiet ho jaega.

• ab is rol ko thanda hone ke baad chaakoo se chhote-chhote pis mein kaat len.

• ab kadhaahee mein tel garm kare aur vo sab chhote-chhote pis ko dheemee aanch par tal len.

• ab arabee ke pakode banakar pooree tarah se taiyaar hai, aap jaise chaahe kha sakate hai, chaahe to ise sabjee bhee bana sakate hai .

Note : arabee ke pakode khaane par kabhee-kabhee munh mein khujalee jaisa mahasoos hota hai , to isake lie usame imalee ka palp ya phir khatta aachaar daalana jaruree samajhen | ise pise hue daal mein achchhee tarah se mila den.
